Oh boy, I tried substituting almond milk for milk in some cream sauce recipe back in my vegan days, except I forgot it was vanilla flavored and ho boy, it was very bad.
Tbh, I don’t mind vanilla soy milk Mac and cheese. My partner hates it, so I use powdered milk when cooking for both of us. (Neither of us uses enough cow milk to keep it fresh on hand)
