So if Sony studios hadn’t made that “exclusivity” deal with Netflix recently, I’m guessing this moderately successful show would have been shopped to other networks?

Nope. The output deal covered Sony’s theatrical releases in the Pay-1 window. Besides, Sony would have to wait for NF’s exclusivity on the show to expire, which would last years unless waived.
NF pays a premium for commissioned content to hold an extended exclusivity window and to buy out revenue streams.
